We’ve made it to May and celebratory cocktails are in order, just in time for entertaining season and Mother’s Day! One of our favorite cocktails to enjoy for spring and summer entertaining is a margarita. This quintessential tequila cocktail is light, citrusy, versatile and well suited for the sunshine and back patio gatherings. Whether blended or on the rocks, margaritas are a quick and easy drink to make, requiring just a few ingredients! Today’s version of the margarita has spring written all over it, with a thyme simple syrup infusion and a fresh garden thyme garnish. With subtle herb notes, it is perfect for sipping while enjoying a warm afternoon or evening!

THYME INFUSED MARGARITAS
Garden thyme infused margaritas paired with freshly squeezed lime juice, tequila, homemade thyme simple syrup, Cointreau (or orange liqueur), served on the rocks with a classic salted rim.
Margaritas have to be one of the most versatile cocktails out there! The lime juice and tequila goes well with almost any fruit or herbs with endless pairing possibilities. While this was my first time using thyme in a margarita, I was pleasantly surprised by the light herby and floral flavor, so much so, that I couldn’t wait to share the recipe with you!
HOW TO MAKE THYME SIMPLE SYRUP
Simple syrup is one of the easiest recipes to make. With just 3 ingredients it’s ready in no time and can be used in a variety of ways, from cocktails to desserts! To make the thyme simple syrup, simply mix sugar and water, and 5-6 springs of fresh garden or store bought thyme. Heat the mixture on the stove top to a rolling boil. Boil for 2-3 minutes then remove from heat and set aside to cool, allowing the flavors to continue mingling. The syrup will keep for up to 4 weeks in a sealed container in the fridge.
HOW TO MAKE THYME INFUSED MARGARITAS
These margaritas get the thyme flavor from the simple syrup. All of the rest of the ingredients are classic.
Rim 2 glasses with kosher salt and fill with ice. Pour 1.5 parts Tequila into each glass. Top with 1.5 parts thyme simple syrup. Then pour in 1.5 parts lime juice and 1 part Cointreau each. Gently stir and garnish with garden thyme and lime wheels. Serve immediately!

I highly recommend using quality Tequila for the best overall taste and flavor of the thyme margaritas. Patron, Casamigos Respisado and 1800 Silver are my personal favorites.

Ingredients
FOR THE THYME SIMPLE SYRUP:
1/2 cup raw sugar
2 cups water
5–6 sprigs or one bunch of fresh thyme
FOR THE THYME INFUSED MARGARITAS
3 oz (1.5 parts each glass) Tequila of choice
3 oz (1.5 parts each glass) Thyme infused simple syrup
3 oz (1.5 parts each glass) fresh squeezed lime juice
2 oz (1 part each glass) Cointreau or orange liqueur
Ice
Fresh thyme sprigs, lime wheels and kosher salt for garnish
Instructions
FOR THE THYME SIMPLE SYRUP:
