April has been our busiest month yet! With our kids now back to school full time and weekends filled with traveling around WA for soccer games, it’s been a challenge to keep up. But I’m back, with a new sweet recipe for French palmiers, that I think you’ll love! Palmiers, also known as elephant ears are a light and flaky french pastry/cookie that require just a few ingredients to make! Considering how easy they are, they’re a fitting sweet treat for those of us with busy schedules and also happen to be vegan. Read on to learn how to make a quick batch of palmiers of your own!
FRENCH PALMIERS
Crispy French palmiers made with vegan store bought puff pastry, raw sugar and passion fruit filling. Just 4 ingredients!
WHAT ARE FRENCH PALMIERS
French palmiers have many names. From elephant ears to pig ears and palm hearts, they are ultimately a sweet puff pastry, cut into slices and then baked to form cookies. Upon baking, the puff pastry forms an almost heart like shaped pastry with a variety of fillings between each layer. From simple cinnamon and sugar to nuts, jams and savory, these light and tasty palmiers are versatile, crisp and golden and oh so addictive!
Passion fruit is tart and tropical, pairing perfectly with today’s version of the sugared pastry! When baked in the oven the outer edges and bottoms crisp up, with a thin layer of passion fruit nectar, enveloped in between, resulting in the most heavenly, caramelized and tropical spin on the classic.
INGREDIENTS FOR FRENCH PALMIERS
Palmiers require very few ingredients, making them a simple treat to prep and bake! You will need one box of store bought puff pastry. I used vegan Aussie Bakery brand. Raw sugar. I prefer raw because of its coarseness and the way it caramelizes in the oven. Passion fruit nectar. Melted vegan butter. 15 minutes for chilling and an additional 15 minutes for baking.
HOW TO MAKE PALMIERS
This specific brand of puff pastry comes with two 9×9 sheets of dough. Thaw the pastry, but make sure that it remains chilled.
Roll sheet of pastry out evenly into one large rectangle. Cut away any edges that are not straight so that the rectangle of pastry is even.
Using a pastry brush, brush the passionfruit nectar onto the rectangle.
Sprinkle the passionfruit brushed pastry with raw sugar.
Fold the bottom of the puff pastry 1/4/ over towards the middle.
Fold the top of the puff pastry 1/4 over towards the middle.
Then fold both the top and bottom one more time towards the middle until they line up in the center. There will be a crease in the center.
Brush the top of the pastry with vegan butter.
Then fold the top of the dough over the bottom (or butter brushed side of the pastry,) lengthwise to create one long roll.
Transfer dough to the freezer for 10-15 minutes to chill for cutting with ease.
Once dough has chilled, preheat oven to 400 degrees.
Cut rolled pastry into 1/2″ slices lengthwise.
Dip each of the cut pieces of pastry in raw sugar, then place on a parchment lined baking sheet, pulling the top edges out slightly so that they almost look heart shaped.
Press the cut pastry down gently on the baking sheet, making sure to leave space between each palmier as they will rise in the oven.
Bake in the oven for 12-15 minutes until golden brown.
Cool and enjoy!
