About Palmiers

Palmiers, or “feuille de palmier” originated in France and are an easy to make pastry with many names from elephant and pig ears to palm hearts. With just a few ingredients the puff pastry is sugared, rolled and cut into slices, forming a classic palm or heart shaped cookie. They are classically coated in sugar,  and commonly found in patisseries and bakeries, but can easily be made at home, with either store bought, or homemade puff pastry, sugar and fillings of choice. From jams, to spices and even savory, palmiers are versatile, flavorful and texturally quite perfect!

Adding filling to Palmiers

Although adding filling to palmiers is optional, the possibilities really are endless. I’ve previously made passion fruit palmers, and the apple cinnamon variation is just as wonderful.

Jams, fruit spreads, curd, chocolate, nuts and savory ingredients such as cheese, make wonderful palmiers, along with freeze dried fruit. I’ve discovered through the testing process that freeze dried fruit in powder form is an easy way to enhance and add flavor to palmiers, without sacrificing texture. Using a generous dusting of freeze dried cinnamon apples to coat the puff pastry, resulted in the most delectable fall palmiers, full of seasonal flavor and caramelized layers of flaky pastry.

How they Taste

The apple cinnamon palmiers taste like fall in each bite! The brown sugar dusted pastry caramelizes while baking adding depth of flavor to the pastry, which is already slightly savory. Paired with the freeze dried PPLW and warm cinnamon the crisp, golden and lightly sweetened palmiers are not only addictive but a new favorite. Pair palmiers with coffee, tea or your favorite warm beverage and enjoy all season long!
