Cucumber Margarita Popsicles
Happy Cinco de Mayo! Who else is celebrating with margaritas today?! Although I’m a lover of traditional margs (frozen and on the rocks) sometimes it’s nice to switch things up a bit, so I infused mine with Thatcher’s Organic Cucumber Liqueur and turned them into little popsicles for something a bit different!
I’m loving the fresh the flavor that Thatcher’s Cucumber adds to the frozen pops. Thatcher’s Organic Cucumber is naturally sweet so it pairs very nicely with the lime and tequila of course.
Just a few quick ingredients and some time in the freezer and these mini cucumber margarita pops will be ready to serve and enjoy.
Their miniature size also makes them a wonderful option for parties and entertaining.
CUCUMBER MARGARITA POPSICLES
INGREDIENTS
1/2 cup Thatcher’s Organic Cucumber Liqueur
Juice of 6 large limes
1/2 part tequila
1/2 tsp pink himalayan salt
2 tbsp agave nectar or homemade simple syrup
Thin ribbons of cucumber (rolled) for garnish
You will also need:
Small white party cups
Popsicle sticks with 1/3 cut of the stick cut off.
DIRECTIONS
Mix liqueur, fresh lime, tequila, salt, & agave nectar.
Evenly pour into small white party cups 3/4 of the way full.
Place in the freezer to par-freeze for about 20 minutes.
Remove from freezer and drop 1 ribbon of cucumber into the center of each cup.
Return to the freezer and freeze for 30 minutes, or until solid enough to hold popsicle sticks.
Insert sticks into the center of each cup.
Freeze for 2-3 hours until completely solid.
Enjoy!!
Be mindful of the amount of tequila you add to your popsicle mix. You’ll want no more than 1/2 part otherwise they won’t solidify.
I personally can’t think of a better way to honor the 5th of May!

Brandi I would of never considered cucumber liqueur but with the addition of lime and tequila in a refreshing little Popsicle, who could anyone resist? They sound refreshing. Lovely presentation too.
Thank you! Luckily the cucumber is subtle and not overpowering. It pairs so nicely with the fresh lime and tequila! Definitely worth trying ?
