These new sugar cookies feature love letter decorations, with easy and modern scored letter designs, and tiny confetti hearts for a finishing touch. There’s no icing or frosting on the cookies, so they’re a breeze to make from start to finish. The cookies are also deliciously infused with cinnamon extract and vanilla bean, delivering on flavor and appearance. Valentine’s Love Letter Cookie Inspiration
Valentine’s and Galentine’s day were the inspiration for these love letter cookies. The simplified decorations make them quick to bake while still tasting delicious. The easy letter lines are completed with a paring knife just before baking, similar to the Christmas tree and maple cookies shared last year.
The tiny heart confetti adds such a cute and elevated finishing touch that you won’t even miss the icing!

How the cookies taste
As far as flavor, the sugar cookies have just a hint of cinnamon which pairs deliciously with the creamy vanilla bean and classic sugar cookie taste. The cookies are lightly sweetened with the omission of the icing so they would taste wonderful with a cup of coffee, tea or hot cocoa.
If cinnamon is not your thing, feel free to add your favorite extract or flavoring to the dough.

Ingredients & Supplies
Below is a list of ingredients and supplies necessary to make these cookies at home.
Ingredients:
Butter of choice, granulated sugar, eggs, vanilla bean or vanilla bean paste, baking powder, kosher salt, flour, cinnamon extract, red heart confetti sprinkles (I use Wilton.)
Supplies:
2 baking sheets, parchment paper, rectangle or square shaped cookie cutter, edible glitter.

Baking with plant based butter
Baking with plant based butter is a personal preference, but the cookies can be made with any butter of choice. If using dairy butter and the dough is still soft, add flour one tablespoon at a time while mixing, until the mixing bowl is clean and the dough attaches to the paddle.
How to make the Valentine’s Day Cookies?
These cookies are considered easy on a baking scale. It takes under an hour to cut, decorate and bake from start to finish!
In a stand mixer (or with a hand mixer) mix the butter (of choice) and sugar together until light and fluffy (about 3 minutes), then stir in the eggs, vanilla and cinnamon extract or extract of choice. Next mix the flour, baking powder and salt into the egg, sugar and butter mixture, mixing until well combined. You’ll know the dough is ready when the mixing bowl is clean and the dough attaches to the paddle. If it feels sticky add flour 1 tbsp at a time until the dough attaches to the paddle.
Then, roll the dough onto parchment about 1/4″ thick.
Use a rectangle or square shaped cookie cutter to cut the dough into shapes.

Leave about 1 to 1.5 inches in between each cut cookie so that you can peel away the excess dough.
Then use a paring knife to gently score the cookies with the letter lines. Start by scoring each rectangle cookie with an angled line at the top left and right corner, until they meet in the center.

Repeat these lines on the bottom left and right corner of each cookie to create the letter design. Place one heart confetti sprinkle in the center of each cookie, where the lines meet, to complete each love letter.

Be careful to only score the tops of cookie dough and not cut through them. Then transfer the cookies (already on parchment) onto a baking sheet for baking.

Decorating the cookies
Royal icing will forever be one of my favorite ways to decorate cookies, but bare cookies are also lovely. These simplified Valentine’s cookies focus most on design and flavor making them an easy option for all baking levels! The cinnamon extract adds flavor to the cookies, while the letter and confetti detail creates a sweet and adorable finish!

Ingredients
- 3/4 cups plant based butter (or butter of choice softened)
- 1 cup granulated sugar
- 2 eggs
- Seeds from vanilla bean or 1 tsp vanilla bean paste
- 1/4 tsp quality cinnamon extract
- 2 1/2 cups flour (+ extra, for rolling)
- 1 tsp baking powder
- 3/4 tsp kosher salt
- Rectangle or square shaped cookie cutter
- Red or pink heart confetti sprinkles
- Edible glitter
- Parchment paper
Instructions
Valentine’s Sugar Cookies:
- Pour measured flour, baking powder, and salt into a bowl and mix until combined. Set aside.
- In the bowl of a stand mixer or with a hand mixer, mix butter and sugar together for 2- 3 minutes until light and fluffy.
- Use a rubber spatula to scrape down the edges of the bowl.
- Beat the eggs, vanilla bean and cinnamon extract into the butter and sugars until smooth and fully combined.
- Pour dry flour mixture into the butter, egg and sugar, mixing on medium.
- Mix until the cookie dough forms and attaches to the paddle.
- The mixing bowl should be mostly clean when the dough is ready to roll out.
- No chilling required.
- Preheat oven to 385 degrees.
- Lightly flour a rolling pin and a sheet of parchment paper.
- Roll out the cookie dough out to about 1/4 ” thick.
- Cut the dough into rectangle or square shapes using a rectangle shaped cookie cutter.
- Leave about 1″ to 1.5″ between each cut cookie.
- Peel away excess dough and set aside.
- Then use a paring knife to gently score the cookies with the letter lines. Start by adding an angled line to the top left and right corner of each cookie until they meet in the center. Create the same angled lines on the bottom left and right corners of each cookie to complete the letter design.
- Gently place a heart confetti sprinkle into the center of each cookie. Repeat these steps for all cookies.
- Transfer the cookies on parchment to a baking sheet and place in the oven.
- Bake in the middle rack for 4- 5 minutes.
- Remove from oven and transfer to a cooling rack.
- Repeat steps for remaining dough.
- Once all cookies are baked and cooled dust with edible glitter and a dusting of powdered sugar.
- Enjoy!
Notes
Store the cookies in an airtight container or ziplock for 2 days. Or freeze for up to 6 months.
