The end of summer is near, but there’s still plenty of time to soak up what’s left, preferably with a refreshing beverage in hand! Since it’s five-o-clock somewhere and anything goes as we enjoy the remainder of the season, let’s start happy hour a bit early! After all it is Friday so I think we have the perfect excuse and I’ve got the easy cocktails ready to serve!
Simple Dragonfruit Mojitos
Mojitos are simply made with fresh mint leaves, limes, a dash of sugar, rum and carbonated water. The mint and limes are muddled together to extract the essence and give the cocktail that fresh flavor. I like to think of the Mojito as the go-to cocktail of summer because of it’s light and refreshing nature. While delicious on its own, Mojitos can be easily be infused with a variety of fruits and flavorings like dragon fruit, making it a versatile beverage to enjoy or serve to friends/guests all summer long!
Hello Labor Day cocktail of choice!
The fresh mint from our garden is actually what inspired the dragonfruit cocktail.
And can we talk about its vibrant color for a minute?! The mojitos are muddled with red dragonfruit which has that gorgeous magenta hue. It not only gives off the summer sunset vibes when served, but has a mild kiwi tropical flavor that pairs quite beautifully with muddled lime and garden mint.
Just a few simple ingredients is all you’ll need to make one yourself! Served on the rocks and suited for back patio sipping, end of summer nights!

Simple Dragonfruit Mojitos

Description
Mojitos muddled with garden mint leaves, limes and red dragon fruit make up with refreshing, yet simple summer cocktail.
Ingredients
1 lime cut into 8 wedges
16–20 fresh mint leaves (8+ per cocktail) + extra for garnish
1/2 cup frozen or fresh red dragon fruit (1/4 cup per cocktail)
2 tsp raw organic sugar (1 tsp per cocktail)
2 parts rum
Ice
Carbonated/Sparkling water.
(Cocktail Muddle)
Instructions
Put 8+ mint leaves and 2 lime wedges in a cocktail glass.
Muddle the mint and lime together until the juices are extracted.
Add 1/4 cup of dragonfruit + tsp raw sugar and muddle with mint and lime until combined.
Fill glass with ice and pour in shot of rum.
Balance glass with carbonated water.
Garnish with lime and mint sprigs.
Repeat these steps for the second cocktail.
Serve and enjoy!

You can easily turn this dragonfruit mojito into a mocktail so that everyone can savor and enjoy! Simply omit the rum and add additional carbonated water to balance!
I can’t think of a better way to not only kick off one of the final weekends of summer, but Friday as well!
