We’re just getting back into the swing of things after returning from France and I’m so happy to be back to share these new S’mores macarons with you! There’s nothing that says summer quite like s’mores! The trio of crunchy graham crackers, soft marshmallows, and sweet chocolate, makes them a go-to treat for the season! Although delicious when traditionally made, even better with chewy chocolate macaron shells, that happen to be inspired by our recent travels! They’re toasty, gooey and delicious and everything you’d want in a s’more and more with Dairy free and gluten free friendly alternatives included!

S’mores Macarons Ingredients list

Here’s what you’ll need to make a batch  of these s’mores macarons at home:

Chocolate Macaron Shells

  • Egg whites divided, cream of tartar, quality fine ground almond flour, powdered sugar, granulated sugar, cocoa powder, water, brown gel or powder food coloring, silicone mat or parchment, a piping bag fitted with round tip, baking sheets.

Homemade Vanilla Marshmallows

  • Fish gelatin, water, granulated sugar, maple syrup, vanilla bean/extract

Additional Ingredients:

  • Dark chocolate
  • Graham Crackers

Homemade Marshmallows

Store-bought marshmallows are an easy and tasty fill in, but homemade marshmallows will elevate these s’mores macarons to the next level! The homemade marshmallows are made with maple syrup in place of corn syrup and fish gelatin as an alternative to pork and beef gelatin.

To make a batch of homemade marshmallows, divide water pouring 1/2 in a mixer with fish gelatin to bloom. Pour remaining 1/4 water into a pot with granulated sugar and maple syrup until boiling. Transfer boiling sugar and maple syrup mixture to the gelatin, whisking on medium high for 12 minutes. The mixture will increase in volume and become white and fluffy. Mix in vanilla bean seeds or extract of choice at about 10 minutes and continue whisking until combined.

Transfer to a greased and parchment lined 9×9 baking pan for at least four hours or overnight to set. Cover with greased plastic for easy removal. Once set, cut the marshmallows into even squares with greased knife or scissors.  Dredge in powdered sugar and set aside until ready to toast and enjoy!!

S’mores Macarons Assembly

Once you’ve baked the shells off, you can either serve the macaron s’mores deconstructed, on a tray, or in individual paper bags to share with friends or just assemble and serve. When ready to assemble, simply match up the macaron shells, then place the bottom shell feet side up. Place half a graham cracker on the shell, then toast the marshmallow and place it on top of the graham cracker. Top with dark chocolate square and finish with a second macaron shell. Serve immediately!

Ingredients

S'mores Macarons

  • Premade Chocolate Macarons
  • Homemade marshmallows OR Marshmallows of choice
  • Dark chocolate squares of choice. (choose dairy free for a dairy free option)
  • Graham crackers of choice (choose gluten free for an gluten free option)
  • Wood or metal skewers.
Chocolate Macaron Shells
  • 106 grams of almond flour
  • 102 grams powdered sugar
  • 4 grams Hershey’s Cocoa Powder
  • 41 and 45 grams of egg whites divided
  • 115 grams of granulated sugar
  • 79 grams of water
  • dash of cream of tartar or lemon juice for stabilizing
  • 1/8 tsp brown gel food coloring
Homemade Vanilla Marshmallows
  • 3/4 cup water divided (into 1/2 and 1/4)
  • 3 (.25 ounce) packages unflavored gelatin OR 2 tbsp & 1/4 tsp fish gelatin
  • 1/4 cup maple syrup OR agave nectar. Honey can also be used
  • 2 cups granulated sugar
  • Seeds from 1/2 vanilla bean OR 2 tsp vanilla extract/flavor of choice
  • 1/4 cup powdered sugar (for dredging)

Instructions

Chocolate Macaron Shells

  1. Wipe down the mixing bowl and whisk attachment with vinegar to remove any built up residue. This will ensure that the egg whites whisk up properly.
  2. Prep and measure all of the ingredients using a kitchen scale.
  3. Prep a piping bag with a round tip. I use Wilton tip 12.
  4. Line 2 baking sheets with silpat (or parchment).
  5. Combine measured almond flour & powdered sugar together in a bowl. Sift one time to remove any lumps, discarding of them, then mix together to break up clumps.
  6. Make a well in the center of the dry mix and pour the 41 grams of measured egg whites into the center of the dry mixture. Fold together until blended then add gel food coloring and mix well until fully incorporated. The finished mix will be paste-like. Set aside.
  7. To make the sugar syrup, heat granulated sugar and water in a pot on medium heat with a candy thermometer attached to the side. **Be careful to make sure the thermometer is not touching the bottom of the pot**.
  8. Once the thermometer’s temperature reaches approximately 200 degrees F, place the 45 grams of measured egg whites in the stand mixer and whisk on medium speed.
  9. Add a drop of lemon juice or dash of cream of tartar to stabilize, then continue whisking to soft peaks.
  10. If the egg whites are at soft peaks before the syrup reaches 248 F, turn the mixer down to low speed to keep the egg whites moving.
  11. Watch the sugar syrup closely.
  12. As soon as the sugar syrup reaches 248 degrees F, remove from heat.
  13. Quickly increase mixer speed to medium-hi and begin slowly pouring the sugar syrup down the side of the mixing bowl into the meringue until thoroughly combined.
  14. Increase the mixing speed to high and whisk sugar and meringue together until glossy and medium peaks form and the meringue has cooled down.
  15. Gently transfer finished meringue into the almond/powdered sugar egg mixture in thirds, making sure that it’s fully incorporated before adding the additional 3rd of meringue.
  16. Start the macaronage process by folding the batter in a circular motion, going around the edges of the bowl, then once through the center. Repeat these steps until smooth and thick consistent ribbons of batter run off the spatula.
  17. **Be careful not to over-mix**
  18. You’ll want the batter to be slightly thick, but not so thin that it does not hold the ribbon shape. Err on the side of caution.
  19. Transfer batter to the prepped piping bag(s).
  20. Pipe 1 1/2 inch rounds about one inch apart on the lined baking sheet.
  21. Be sure to hold the piping bag about 1/2 inch directly above the baking sheet when piping the rounds holding the bag steadily. Continue to pipe until you’ve filled an entire baking sheet.
  22. Tap the macarons on the counter three times to release air bubbles.
  23. Pop air bubbles that might’ve come to the surface, using a scribe or even a toothpick.
  24. Before placing the macarons in the oven, let them to rest until a proper skin has formed on the outside of the shell. This can take anywhere from 15 -20 minutes. Test by touching the piped rounds to make sure they’re dry to touch and that no batter comes off on fingers.
  25. Preheat oven to 315 degrees F.
  26. Once the piped batter is dry to touch, place the macarons in the middle rack of the oven.
  27. Feet will form halfway through the baking process.
  28. Bake for 12-14 minutes.
  29. Remove from oven and let cool completely (15-20 minutes) before removing the shells from the silpat/parchment paper.
  30. Once macarons are completely cool, gently remove from parchment paper/silpat.
  31. Repeat the same steps to bake the remaining macaron batter.
  32. Store in airtight container until they’re ready to assemble.

Homemade Vanilla Marshmallows

  1. Grease and line a 9×9 inch baking pan with parchment paper (for easy removal).
  2. Place 1/2 cup of water in the bowl of a stand mixer and add gelatin to water to soak.
  3. While gelatin is soaking add 1/4 cup water, maple syrup and sugar to sauce pan. Bring mixture to boil over medium heat for 2-3 minutes.
  4. Pour hot sugar mixture into gelatin and whisk on high, using a whisk attachment. Whisk for 10 minutes until mix is fluffy and forms medium peaks. Then add in vanilla bean or extract and whisk for another 1-2 minutes until combined.
  5. Transfer marshmallow into the lined baking pan using a greased spatula to smooth top. Cover marshmallow mixture with greased plastic wrap.
  6. Let rest for 4 hours, or overnight.
  7. Pour powdered sugar into a shallow dish.
  8. Using greased scissors, or a knife, cut the marshmallows, dredging lightly in the sugar.
  9. Store in airtight container until ready to enjoy.

Macaron S’mores Assembly

  1. Toast marshmallows either on a skewer or with a kitchen butane torch.
  2. Place macaron shell on surface feet side up. Place graham cracker on top of the macaron, followed by the toasted marshmallow.
  3. Place a chocolate square on top of the toasted marshmallow.
  4. Top with a second macaron shell to create a s’mores macaron.
  5. Serve immediately!

Notes

This recipe is easily adaptable to suit your dietary needs.

Macaron shells are naturally gluten free and dairy free so you can use dairy free chocolate and gluten free graham crackers to suit dietary needs. 

Fish gelatin in the marshmallows is optional but great for anyone that does not consume beef or pork. Any gelatin will work in this recipe.

Store-bought marshmallows will also taste delicious with this recipe.
