Valentine’s Day arrived much quicker than expected and I did not get to all the recipes planned, but was able to squeeze in a quick batch of Red Velvet Linzer cookies, with leftover cream cheese frosting from the red velvet macarons. This play on the classic linzer cookie has a hint of cocoa flavor and gorgeous crimson red color. Coming together in just minutes, they are the perfect treat for Valentine’s Day, but it certainly doesn’t have to be a holiday to make these sweet cookies! The light cocoa flavor, paired with the tangy cream cheese frosting, is scrumptious and enjoyable no matter the season!

The linzer dough is similar to sugar cookie dough but includes almond flour, for a light and sandy texture. Linzer cookies are said to have originated as a torte in Austria, later turned cookies. American versions often have a  variation in the filings and cookie flavors, from ganache to curd and now cream cheese frosting!

The secret ingredient in these linzer cookies is Red Velvet Emulsion from Lorann Oils. The emulsion is infused with red velvet cake flavor and color so there’s no additional food coloring needed. Of course you can also use red food coloring or natural red coloring in its place depending on what you prefer.

Red Velvet Linzer Cookies Supplies and Ingredients 

These cookies come together in a matter of minutes and require no chilling time. Below is the list of simple the supplies and ingredients you’ll need.

  • Red Velvet Cookies: Flour, sugar, butter, eggs, cocoa powder, baking powder, salt, vanilla, red velvet emulsion. Powdered sugar for dusting.
  • Cream Cheese frosting: Cream cheese softened, organic shortening (or butter of choice), powdered sugar, salt, vanilla, lemon zest.
  • Supplies: Hand or stand mixer, parchment paper, baking sheet, rolling pin, cookie cutters in 3″ heart shape and 1″ heart shape. Piping bag for frosting. Sifter for powdered sugar.

Can I use plant based ingredients? 

You can use plant based butter and plant based cream cheese as as an alternative in this recipe, however you may need to increase the dry ingredients 1 TBSP at a time as the consistency of plant based products can be slightly different.

How to make Red Velvet linzer cookies 

Making a batch of the linzer cookies is similar to a batch of sugar cookies! Mix ingredients together as directed.

Once the dough is formed and rolled out, cut into shapes of choice using cookie or biscuit cutters.

Make sure to cut an even number of cookies in the dough, to match up and sandwich once baked.

Once baked and cool, pipe cream cheese frosting onto the solid heart cookies.

Ingredients

Red Velvet Linzer Cookies
  • 2 cups all purpose flour ;
  • 1/4 super fine almond flour
  • 2 tbsp cocoa powder
  • 1/2 cup granulated sugar
  • 1/3 cup butter of choice
  • 2 eggs
  • 2 tsp Red Velvet Emulsion
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt
  • Powdered sugar for dusting
Cream Cheese Frosting:
  • 1/2 cup butter of choice 
  • 1/2 cup softened cream cheese
  • 1 1/4 cups confectioners sugar
  • 1/2 tsp fine lemon zest
  • 1 tsp vanilla
  • pinch of salt
Supplies:
  • Heart Cookie Cutter
  • Small fondant heart cutter or shape of choice
  • Parchment paper & baking sheets
  • Piping bag
  • Rolling pin

Instructions

Linzer Cookies:

  1. Pour measured flour, almond powder, cocoa powder, baking powder and salt into a bowl and mix until combined. 
  2. In the bowl of a stand mixer, mix butter and sugar together until light and fluffy and a pale yellow color, about 3 minutes.
  3. Use a rubber spatula to scrape down the edges of the bowl.
  4. Beat the eggs, red velvet emulsion and vanilla extract into the butter and sugar until smooth and combined.
  5. Pour flour, almond and cocoa mixture into the butter, egg and sugar on medium.
  6. Mix until the the cookie dough forms and attaches to the paddle. If dough is still slightly sticky, you can add additional flour, 1 tbsp at a time until the dough attaches to the paddle.
  7. No chilling required!
  8. Preheat oven to 400 degrees.
  9. Lightly flour a rolling pin and place a sheet of parchment paper or a solid surface.
  10. Lightly flour dough and roll out onto the sheet of parchment about 1/4 ” thick.
  11. Cut the dough with a cookie cutter of choice in an even number. You’ll be able cut out approximately 2 dozen circles or hearts from the dough.
  12. Use a small cutter to cut out the shape in the center of half of the cookie cutouts.
  13. Remove the excess dough surrounding the cut shapes, then transfer the cookies (still on parchment) to the oven.
  14. Bake in the middle rack for 5 minutes for soft cookies.
  15. Remove from oven and cool completely before matching up.
  16. Repeat steps for remaining dough. 

Cream Cheese Frosting:

  1. Mix organic shortening, cream cheese and powdered sugar together in a stand mixer for about 3 minutes until light and fluffy.
  2. Mix in lemon zest, vanilla and salt until incorporated.
  3. Transfer frosting to piping bag and set aside.

Assembling the Linzer Cookies:

  1. Pipe cream cheese frosting onto the tops of the solid heart cookies.
  2. Then place the cutout cookie on top of the cream cheese topped cookie to form a sandwich.
  3. Lightly dust cookies with  with powdered sugar.
  4. Seal in airtight container and serve immediately, or keep in the fridge in airtight container until ready to serve. 
  5. Allow to come to room temp for 10-15 minutes upon serving

Notes

This recipe makes roughly 12-15 cookies. Double for extra.
