One of the things that I love to do when I have the free time is to bake and decorate sugar cookies. I’ve been doing this in my spare time for over 8 years and it’s such a therapeutic way to pass the hours. While intricate cookie decorations are usually my go-to, there are other ways to decorate cookies that can be just as beautiful, without taking hours to complete from start to finish! Today’s pretty pink sugar cookie bites are a perfect example of that. Simply and sweetly topped with a dollop of icing by way of a star shaped piping tip, in 3 variations of pink! An added bonus?! The cookies can be made gluten and dairy free!
PRETTY PINK SUGAR COOKIE BITES
Bite sized sugar cookies decorated with royal icing stars in shades of pink, dairy and gluten free.
Flavor wise these cookies are delicious! Soft and tender with classic vanilla notes, topped with fluffy royal icing that’s hardens when it sets, creating a delightfully textured bite that’s irresistibly sweet!
In addition to being irrisistable, the three variations of pink, make these pretty cookies perfect simple dessert option for parties and celebrations!
EASY RECIPE FOR SUGAR COOKIE BITES
These sugar cookie bites are not only quick to bake, but also to decorate! The cookie dough can even be made with alternatives based on what you have at home in your pantry or your dietary restrictions. From vegan butter to flax eggs, and even gluten free flour.
In a stand mixer, simply mix the sugars and vegan butter (or regular butter) together. Incorporate the regular egg + vanilla (or flax egg) into the butter and sugar mixture until combined. Slowly pour in measured flour, baking powder and salt. Mix until the dough pulls from the bowl and sticks to the paddle, then roll and cut with a 3″ round shape. Use a shot glass or other round tool of choice.
Bake cookies in the oven for no more than 4 minutes, so that they remain tender and light with a soft crumb. See full recipe below for further instructions.
HOW TO DECORATE COOKIES WITH ROYAL ICING
Royal icing is naturally dairy free, simple to make and provides gorgeous decorating possibilities from intricate to easy. Normally you’d use a combination of stiff and flood royal icing to decorate sugar cookies, but today we’re only using stiff icing in 3 shade of pink.
Making a small batch of the royal icing is simple, requiring only these ingredients:
Confectioners sugar, meringue powder, water and flavoring of choice + gel food coloring. The stiff icing, will need to be a thick consistency like toothpaste. You can achieve this consistency by only adding a few drops of the measured water to the sugar and meringue powder at a time. Once the desired stiffness is achieved, divide the white icing into 3 separate bowls.
FOR THE OMBRE PINK ROYAL ICING:
Add 1-2 drops of pink gel coloring to the first bowl of icing. 3-4 drops of gel coloring to the 2nd bowl of icing and 5-6 drops of gel coloring to the 3rd bowl of icing. Mix each bowl of icing until evenly combined, then transfer each color of icing to separate piping bags, prepared with a star tip of choice. like Wilton 4B.
Gently squeeze a dollop of icing onto the center of each baked cookie round. Change the color of icing for each decorated cookie, then set aside.
The cookies will only take a few minutes to decorate from start to finish and are ready to enjoy right away! Do keep in mind that the icing will harden, the longer the cookies are kept, so enjoy right away, or freeze.

Ingredients
FOR THE SUGAR COOKIES:
- 3/4 cups vegan butter (or real butter softened)
- 1 cup white sugar
- 2 eggs (or two flax eggs: 2 tbsp ground flax + 7 tbsp warm water)
- 1 tsp vanilla (use gf vanilla or vanilla bean if gluten sensitive)
- 2 1/2 cups flour (or gf blend such as namaste or Bob’s Red Mill)
- 1 tsp baking powder
- 1 tsp salt
FOR THE ROYAL ICING:
- 2 Cups Powdered Sugar
- 2 TBSP Meringue Powder
- 1/4 warm water
- 1/2 tsp Vanilla or almond extract.
EXTRA SUPPLIES:
- Pink gel food coloring
- 3 piping bags
- 3 star tips, such as Wilton 4B or similar
Instructions
FOR THE SUGAR COOKIES
Preheat oven to 400 degrees.
Pour flour, baking powder, and salt into a bowl.
The the bowl of a stand mixer, cream together vegan butter and sugar until combined.
Mix in eggs ( or flax eggs) and vanilla until combined.
Pour in flour (gf option), baking powder and salt.
Mix on med-hi until combined.
You’ll know your cookie mix is ready when most of it sticks to the mixing paddle.
Roll dough out onto a floured surface (about 1/2 inch thick)
Cut into 3″ round shapes using a shot class or circle cutter.
Bake cookies on a parchment lined baking sheet for about 3-4 minutes. (Pull from oven before brown)
Remove from heat and cool.
FOR THE ROYAL ICING:
Combine powdered sugar and meringue powder in the bowl of a stand mixer.
Pour in extract then gently begin to add the warm water, a few drops at a time while mixing, until the icing reaches a thick consistency of toothpaste.
Once stiff, divide the white icing into 3 separate bowls.
Add 1-2 drops of pink gel coloring to the first bowl of icing.
3-4 drops of gel coloring to the 2nd bowl of icing and 5-6 drops of gel coloring to the 3rd bowl of icing.
Mix each bowl of icing until evenly combined, then transfer each color of icing to a piping bag, prepared with a star tip of choice. like Wilton 4B.
Gently squeeze a dollop of icing onto the center of each baked cookie round.
Change the color of piped icing for each cookie that you are decorating then set aside.
The cookies will only take a few minutes to decorate from start to finish and are ready to enjoy when the icing begins to harden.
Store in a sealed container for up to 3 days or freeze for up to 3 months.
