Memorial day weekend marks the unofficial start of summer (Cue the quick cocktails) and today we’re highlighting the Aperol Spritz!
The Aperol spritz is the quintessential summer cocktail. It’s light, refreshing, a little fizzy, chilled with ice and has a vibrant orange color that’s reminiscent of days near the ocean, surrounded by striped umbrellas and a warm breeze.
What sets the Aperol Spritz cocktail apart from many other cocktails is the the vibrant orange color and slightly bitter taste. It’s classically made with prosecco, Aperol (orange liqueur) and sparkling soda, then garnished with slices of orange.
I first tried the Aperol Spritz while in France last year and although I love the classic Italian Aperitif, today we’re infusing the Aperol spritz with fresh rhubarb for a seasonal twist!
Rhubarb Aperol Spritz
The bright rhubarb adds a such a lovely balance to this classic and delicious cocktail.
From the tartness that pairs perfectly with the bite of the orange in the Aperol, to the smoothness from the simple syrup. Together the sweet and tart spritz is a must try!
To infuse the Aperol Spritz with the flavor of rhubarb, I made a quick rhubarb simple syrup, and then garnished the cocktail with ribbons of the rhubarb for a finishing touch!

Rhubarb Aperol Spritz

Description
A twist on the classic Italian aperitif, infused with fresh rhubarb simple syrup and rhubarb ribbons for garnish.
Ingredients
For the Rhubarb Simple Syrup:
4 cups water
1 cups raw sugar
2 stalks rhubarb cut into 1 inch slices.
For the Rhubarb Aperol Spritz:
2 parts rhubarb simple syrup
1 part Aperol (1/2 shot per each glass)
Prosecco or sparkling wine
Splash of sparkling soda or tonic water
Ribbons of rhubarb sliced with a potato peeler or mandolin. Orange zest and 4 orange slices for garnish.
Instructions
For the Rhubarb Simple Syrup:
Pour the water sugar and rhubarb slices into a pot.
Heat on medium and bring ingredients to a boil.
Allow to slowly boil for 2 minutes.
Remove from heat and allow to cool.
Once cool, strain or funnel simple syrup into a jar or bottle of choice.
The syrup will keep for 1 week in the fridge.
For the Rhubarb Aperol Spritz:
Fill two white wine glasses with ice.
Add sliced oranges to the glasses.
Pour one part rhubarb simple syrup into each glass.
Pour in 1/2 part aperol into each glass.
Fill each glass with prosecco or sparkling wine.
Add a splash of soda.
The bubbles for the soda will help mix the spritz.
Garnish the cocktail with orange zest and ribbons of rhubarb.
Serve immediately.
