January and Feb might be the toughest months to get through, but cookies make everything better! Especially when they’re simply dipped in toppings reminiscent of summer. I know! It’s only 17 degrees out, but I promise these ice cream inspired delights will get you through the final days of winter, at least until the temps start to warm up!
NEAPOLITAN DIPPED SUGAR COOKIES
The basic sugar cookies are cut in circles for a modern touch.
Once baked, they’re simply dipped in a duo of glazes and dark chocolate for a twist on classic neapolitan ice cream, we all know and love.
You will love this dipping technique, because it’s an easy way to decorate the cookies without having to pipe icing. A must if you’re in a pinch!
The dips are also quick to whip up using fresh strawberry puree and sweet vanilla beans.
If you’re a fan of strawberry (like me) you’ll love how the tart berry glaze pairs with the sugar cookie.
The dark chocolate has bite and the vanilla bean is the sweetest of the three, but they’re all equally delicious, just like the ice-cream!
In addition to the taste, you’ll love how the naturally tinted glaze dries onto the round cookies.
Basically perfect for stacking.
And as an added bonus, the cookies are dairy free so they will be suitable for anyone with a lactose allergy.
