Fall has arrived, but our summer garden is still going strong. The weather has been warm and mild, resulting in a a plentiful harvest of garden tomatoes. From cherry and San Marzano to lemon boy and early girl. While we enjoy tomatoes most fresh off the vine, they are also quite delicious paired with herby goat cheese and wrapped in flaky pastry. Baked to perfection, this recipe for Savory mini Garden Tomato Galettes with goat cheese is a quick way to use up some of your harvest! To be enjoyed any time of day but especially for breakfast, brunch, as an appetizer or even a light lunch!
Savory Mini Garden Tomato Galettes with Goat Cheese
Easy and tasty mini garden tomato galettes also known as a rustic tomato tart, featuring sliced garden tomatoes and herby lemon goat cheese wrapped in flaky pastry. Garnished with sea salt, herbs and chive blossoms for a delightful and delicious presentation.

Rustic Mini tomato Galette Inspiration
Inspired by the end of summer and beginning of fall, these mini tomato galettes pair a little bit of both seasons, from the fresh garden tomatoes to flaky fall pastry, for a wonderful transitional recipe as a result.


I envision serving these rustic tomato tarts at hosted brunches or as a lunch appetizer. They would also be a lovely and welcomed addition to your seasonal hosting menus and look gorgeous placed in a basket or on a platter for serving.


How the mini savory tomato galettes taste
I’m a sucker for pastry and how it effortlessly pairs with just about any ingredient. At first bite, you’ll enjoy the buttery flaky pastry, creamy and citrus forward goat cheese and jammy home grown tomatoes. A trio of flavors that marry together perfectly, with the herbs and salt to tie all the ingredients together.

Ingredients & Supplies
Below is the list of ingredients and supplies you’ll need to make these easy savory tomato galettes at home.
Ingredients:
Sliced garden tomatoes sliced, lemon or herb infused goat cheese,


Butter of choice grated, all purpose flour, ice water, sea salt, egg white, oil (olive or avocado,) fresh herbs such as thyme, or parsley, chive blossoms.

Supplies:
Parchment paper, rolling pin, baking sheet, glass bowl for prepping crust, circle cutter.
Baking with plant based butter
Baking with plant based butter is a personal preference, however the pastry can be made with any butter of choice. If using dairy butter and the pastry is too soft, add flour one tablespoon at a time until correct soft roll out consistency is achieved.
How to make Savory Mini Garden Tomato Galettes
These rustic summer galettes are easy on a baking scale, taking around 35-40 minutes from start to finish.
Preheat oven to 375 degrees Fahrenheit. Pour flour and salt into a mixing bowl. Cut the grated butter into the flour and salt until it’s a crumb-like consistency. Next add ice water 1 tablespoon at a time, mixing well until the ingredients form together. Once fully combined, roll the pastry out onto a floured parchment lined surface to about 1/4″ thick.

Cut the pastry into six roughly equal pieces (it doesn’t have to be perfect.) Then use a circle cutter to indent the center of the pastry as a guide for the filling.

Next spoon softened goat cheese into the center of each section of pastry, leaving a space along the edges to fold over the tomatoes.

Place 3-4 layered tomato slices on top of the goat cheese. Then Gently fold the excess pastry over the tomatoes in an overlapping pattern. Repeat these steps for all mini galettes (approximately 6). Then brush with egg wash and garnish with sea salt and herbs.



Bake in the oven for 18-22 minutes, or until golden.
The mini tomato galettes can be served hot, at room temperature or chilled. Store in the fridge for 2-3 days maximum, and freeze any leftovers.

Baking Tips & Substitutions
Below are a baking few tips and substitutions for the galettes!

Butter alternatives: If making plant based, the butter I recommend to use in country crock olive oil sticks. It grates nicely and has a mild flavor. Or use any kind of dairy butter that you prefer.
Goat cheese alternatives: If you’re not a fan of goat cheese, feel free to substitute the recipe for a soft cheese of your choice, from cream cheese to Boursin, ricotta, feta, or dairy free alternatives.
Store-bought tomatoes: If you don’t have garden tomatoes on hand, store bought will work perfectly.
Baking: These galettes are pretty forgiving, but be sure not to over-bake. You’ll know the galettes are ready with the pastry is crisp and golden brown.
Size: Make this recipe in the size of your choice. From one large galette, to 6 mini. If choosing a large galette, place a bowl in the center of the rolled out pastry to mark off the space for the filling. Arrange the goat cheese and tomatoes onto the pastry dough and gently wrap the excess around the filling. Bake for 25-30 minutes or until golden brown.

Ingredients
- 3/4 cups cold grated plant based butter (or butter of choice)
- 2 cups organic unbleached all purpose flour
- 3/4 teaspoon kosher salt
- 10 tablespoons ice cold water
- 1 Egg white for egg wash
- 4-6 oz of softened citrus or herbed goat cheese, or soft cheese of choice.
- 5-6 garden or store-bought tomatoes sliced and gently blotted to remove excess juice
- 2 tablespoons chopped fresh parsley and or thyme
- 1 tsp salt flakes (kosher, maldan, etc)
- Chive blossoms (optional)
Instructions
Rustic Galette Pastry:
- Preheat oven to 375 degrees Fahrenheit.
- Line a baking sheet with parchment and spray with oil of choice.
- Pour flour and salt into a mixing bowl.
- Use a pastry cutter or fork to cut the grated butter into the flour and salt until it’s a crumb-like consistency.
- Next add ice water 1 tablespoon at a time, mixing well into the flour and butter until the dough forms.
- Once fully combined, roll the pastry dough out onto a floured parchment lined surface to about 1/4″ thick.
- Cut the rolled pastry into six mostly even sections.
- Use a round circle cutter to mark off the space in the center of each section of pastry as a guide for the filling.
- Repeat steps for any remaining pastry.
Tomato Goat Cheese Filling:
- Spoon softened goat cheese into the marked off center of each section of pastry, leaving a space along the edges to fold over the tomatoes.
- Top the goat cheese with 3-4 layered tomato slices.
- Gently fold the excess pastry over the tomatoes in an overlapping or folded pattern.
- Repeat these steps for all galettes (approximately 6-8).
- Then brush with egg wash and garnish with sea salt and herbs.
- Place on oiled and lined baking sheet.
- Bake the mini galettes in the oven for 18-22 minutes or until golden brown.
- Enjoy at room temp, hot or cold.
Notes
Store mini galettes in a sealed container for 2-3 days max, or freeze until ready to enjoy!
