We’ve been adjusting to having a new puppy at home, and blog production has been slow as a result, but I’ve still been doing quite a bit of recipe testing, so I’ll have several new treats to share this week and next! Since strawberry season is nearly over, I won’t waste any more time getting to the first recipe in the lineup! Homemade strawberry pop tarts, with a vegan and gluten free crust!
HOMEMADE GLUTEN FREE STRAWBERRY POP TARTS
Gluten free vegan pop tarts, filled with fresh strawberries and topped with a quick and easy strawberry glaze.
These homemade pop tarts have delicious written all over them! Flaky and crispy crust, a fresh baked berry center and a tart 3 ingredient pink strawberry glaze that’s as pretty as it is tasty. They’re way better than any store bought pop tarts, and would make a great breakfast or brunch option! They can even double as a healthy-ish dessert with strawberry in every single bite!
Using a mix of store-bought and garden strawberries gave the pop tarts such delicious summer flavor! If you’re growing your own summer berries, I recommend using them! The pop tart recipe is also a super easy to make, taking only about 30 minutes from start to finish! The crust is made from gluten free and vegan flour but it’s so tasty you won’t be able to tell the difference. Promise!
I attribute the delicious flavor of the pop tarts to the flour and the fresh berries. Using fresh fruit makes all the difference as does this amazing Namaste Gluten Free flour that creates the very best gluten-free desserts!
HOW TO MAKE GLUTEN FREE HOMEMADE POP TARTS
Making pop tarts homemade is as easy as well, pie! Place the sliced strawberries into a bowl and with 1 tsp of raw sugar or maple syrup to macerate. Simply combine the gluten free flour, shortening, ice water and salt until it forms a dough, then roll out onto a floured surface at 1/2 inch thick. Use a pairing knife to cut the dough into mostly even sized rectangle shapes, (they don’t have to be perfect) then place the sliced strawberries into the center of each bottom half of dough. Leave space around the outside of the dough, then top with second rectangle of dough. Use a fork to seal all the edges and to poke holes in the top of the pop tarts, brush with coconut oil. Repeat these steps for each of the homemade pop tarts, then place on a parchment lined baking sheet and bake in the oven until golden brown.
EASY STRAWBERRY GLAZE
The easy strawberry glaze gives the pop tarts a sweet and gorgeous finishing touch! To make the strawberry glaze, blend strawberries into a quick puree then mix with a dash of lemon and confectioners sugar. Stir until combined and drizzle glaze over the tops of the cooled pop tarts. Allow 20 minutes to set.

Description
Gluten free vegan pie crust, made homemade, filled with fresh strawberries, baked and then topped with a quick and easy strawberry glaze.
Ingredients
For the crust:
2 cups gluten free flour (I use Namaste)
1/2 cup shortening
1 tsp salt
7 tbsp ice cold water
Coconut oil, melted
For the pop tart filling:
2 cups fresh strawberries sliced
1 tsp raw sugar, sugar alternative or maple syrup
dash of vanilla
For the strawberry glaze:
1.5 cup powdered sugar
Splash of lemon juice
1/4 cup fresh strawberry puree (1 teaspoon at a time)
Instructions
For the strawberry filling:
Place sliced strawberries in a bowl with teaspoon of sugar of choice to macerate. Set aside
For the crust:
Preheat oven to 400.
Mix flour, shortening and salt together until crumb-like texture is achieved. This can be done with a pastry cutter, fork, hands, or a food processor.
Add tbsp of ice water one at a time, to the flour, shortening and salt, until fully combined and a dough forms. I found it easiest to use my hands.
Once the dough forms a ball, roll out onto parchment or floured surface at 1/2″ thick.
Using a pairing knife to cut dough into 8 rectangles, roughly 4″ each.
Layer the center of the bottom rectangle of pie crust with sliced strawberries, leaving space around the sides, then place the second rectangle of pie crust on top.
Use a fork to seal all edges together and to poke holes in the tops of the pop tarts.
Repeat steps for making all the pop tarts, then place on a parchment lined baking sheet.
Lightly brush the tops of the completed pop tarts with coconut oil
Bake in the oven for 12-15, or until golden brown. Then transfer to a rack to cool.
For the strawberry glaze:
While the pop tarts are baking, whip up the quick strawberry glaze.
Add strawberry puree 1 teaspoonful at a time mixing thoroughly until incorporated.
When the glaze is ready, it will be a thick slow dripping consistency. If it seems too thick add a splash more puree.
Drizzle the glaze over the tops of the cooled pop tarts. Dust with powdered sugar and serve.
