But before moving on, I’m savoring the beautiful sakura blooms just a little longer with a delicious and refreshing sakura cherry blossom spritz. An elegant pink hued cocktail featuring homemade sakura simple syrup, vodka, lime juice and champagne. It’s such a bright and classy cocktail to serve for brunch on Mother’s Day, or for any upcoming spring/summer gatherings you’ll be hosting! With delicate tea, and floral flavor it couldn’t be more fitting!

We had 70 degree weather last weekend and the sakura spritz was such a refreshing sip after a full day working in the yard! While sipping, I was fully envisioning this cherry blossom cocktail on upcoming party menus!
How does the Sakura spritz taste?
If you love a good sparkling cocktail be sure to add this one to your favorites! It’s new and exciting for the tastebuds with subtle cherry blossom flavor that’s tea like with floral and cherry/fruit undertones. The splash of lime juice only enhances the flavor of the sakura simple syrup which mixes deliciously with the gluten free vodka and brut champagne for a mouthwatering concoction. Each sip, like a spring day with light effervescence!
The sakura simple syrup provides the lightly sweetened cherry blossom flavor in the drink. With just 3 ingredients it’s also very easy to make, similar to all the other simple syrup recipes I share on the blog!
Sakura simple syrup
Sakura cherry blossom simple syrup is sweet, with lovely sakura flavor and gorgeous a fuchsia pink color, but the method for making this specific simple syrup is a little different due to the ingredients in the sakura powder.
To make a batch you will combine sugar and water together in a saucepan. Bring to a boil for 2 minutes, then remove from heat. You’ll need to let the sugar syrup cool fully before whisking in the sakura powder, to avoid the syrup thickening into a jello like consistency. The reason for this is the vegetable gelatin in the sakura powder. When heated it activates and thickens, so keep that in mind when making.
The finished result is the most beautiful syrup perfect for cocktails, mocktails and desserts! The simple syrup will also keep for 3-4 weeks in the fridge in a sealed container, so you can make it in advance for easy cocktail mixing this Mother’s Day!

How to make a Sakura Spritz
Cocktail
Making a sakura spritz at home is quite simple! Fill a cocktail shaker with ice, sakura simple syrup, lime juice and gluten free vodka (or vodka of choice) and shake.
Fill 3 short glasses with ice and pour cherry blossom mixture evenly between the glasses.
Top with champagne and a splash of club soda or sparkling water, and give it a gentle stir.
Garnish with sakura blossoms and serve immediately!

Ingredients
Sakura Cherry Blossom Simple Syrup:
- 1 cup sugar
- 1 cup water
- 3 tsp Sakura Cherry Blossom powder
Sakura Spritz:
- Ice
- 3 oz sakura simple syrup
- 3 oz gluten free vodka
- Juice from 1/2 large lime
- 3 oz sparkling wine/champagne (brut or dry champagne recommended)
- Splash of club soda or sparkling water
- Cherry blossoms for garnish
Instructions
Sakura Simple Syrup:
- Combine sugar and water together in a saucepan.
- Bring to a simmer, then boil for 2 minutes.
- Remove from heat.
- Let the sugar syrup cool fully, then whisk in 3 tsp sakura powder. Not heating the sakura powder will stop the powder form changing color and becoming a thickened consistency.
Sakura Cherry Blossom Spritz:
- Fill a cocktail shaker with ice.
- Pour in the sakura simple syrup, vodka and lime juice and shake until well combined.
- Fill 3 short glasses with ice.
- Pour sakura vodka mixture evenly between the 3 glasses.
- Top with brut champagne and club soda and stir gently.
- Then garnish with cherry blossoms.
- Serve immediately.
