With so much going on in the world, I’m thinking of ways to add more value to the blog. Groceries and supplies are not as accessible as usual, so I’m putting together a new series of recipes, made with basic pantry ingredients, while also sharing baking tips and pointers for those of us quarantined at home. The new series kicks off today, with my two daughters, who are home from school for the next 4+ weeks. As part of their home learning schedule, they’ll be taking part in the series, baking a new treat weekly, only using items we have on hand. This week they made dairy free Blueberry Streusel muffins! The from scratch muffins are simple, but delicious and a comforting treat to bake at home together, as we all do our part to flatten the curve.

DAIRY FREE BLUEBERRY STREUSEL MUFFINS

My girls absolutely love all kinds of muffins, but especially blueberry! They are one of those treats that never go out of style. Classic and delicious any time of the day, from breakfast, to lunch and even for a late night snack! These particular blueberry muffins are bursting with blueberries and the cinnamon streusel topping adds a mouthwatering texture to every single bite!

HOW TO MAKE BLUEBERRY STREUSEL MUFFINS
Muffins are an easy and fun treat to make at home with kids, requiring only a few steps. My daughter’s made these breakfast favorites all by themselves, with very little guidance. It was fun to photograph their process while also sharing quality time in the kitchen. In doing so, I was reminded of how much of a blessing it is to have them home.
The blueberry streusel muffins come together quickly. They take about 20 minutes to prep, with an additional 15 or so minutes in the oven. Start by greasing the liners. Then measure the the dry ingredients together in a bowl and set aside. Mix the wet ingredients, including dairy free milk in a stand or hand mixer, then pour the dry ingredients in thirds, into the wet. Fold frozen or fresh blueberries into the muffin batter, then spoon the prepared batter into the lined muffin tins.
CINNAMON STREUSEL TOPPING
Before placing prepared blueberry muffin batter into the oven, sprinkle each one with cinnamon streusel topping. The topping is ready in a flash, with just 3 ingredients. Vegan Butter, flour and brown sugar. Simply mix all 3 until they clump together, then top the blueberry muffins for baking!
You’ll only need minimal ingredients to make this blueberry muffin recipe! The basics include just 1 egg, 2.5 cups of flour and 1/2 cup of sugar.
Breakfast muffins from scratch in just over 30 minutes! Made by kids, for kids and of course adults as well!

Description

Ingredients
For the Blueberry Muffins:
2.5 cups flour
1/2 cup sugar
3 tsp baking powder
pinch of salt
1 cup alternative milk (almond, coconut, oat) + 2 tbsp lemon juice or vinegar
1/4 cup butter
1/4 cup oil
1 tsp Vanilla
1 large egg. (Could use equivalent of flax egg alternative for vegan muffins)
1 cup fresh or frozen blueberries
For the Cinnamon Streusel Topping:
1/4 cup packed brown sugar
1/4 cup flour
2 tbsp vegan butter softened.
1 tbsp cinnamon
Instructions
For the Blueberry Muffins:
Line a muffin pan with lightly greased muffin liners and set aside.
Pour flour, baking soda and salt into a bowl and mix until combined.
In the bowl of a stand mixer, mix butter and sugar until light and fluffy.
Pour in egg and vanilla continuing to mix until combined.
Pour in oil and mix ingredients together for one minute until thoroughly incorporated.
Pour 1/3 of the dry flour mix into the wet, followed by 1/3 of the alternative milk and lemon juice. Mix and repeat these steps until all flour and milk have been incorporated into the batter.
Mix batter on low until combined, then remove the paddle and bowl from the stand mixer.
Fold blueberries into the batter, then spoon roughly 1/4 cup of batter into each muffin liner.
For the Streusel Topping:
Preheat oven to 400
Pour sugar, flour and cinnamon into a bowl.
Use a fork to mix in the softened butter with the sugar, flour and cinnamon until it forms into clumps.
Sprinkle streusel on top of each of the blueberry muffins.
Bake muffins in the oven for roughly 15-18 minutes. Check at 15 minutes by inserting a toothpick into the center of the muffins. They’re ready when the toothpick comes out clean.
Remove muffins from oven and transfer to a cooling rack.

Notes
Store muffins in a sealed container for 3 days or place the remaining in the freezer.

In addition to being delicious, these muffins are super versatile! If you don’t have blueberries on hand, try 1 cup of chocolate chips, raisins or even banana for easy replacement options.
They also store well and can be kept in the freezer for up to 3 months.
My girls put special care into making the muffins and orgnaizing this recipe and I hope it brings you some comfort during these uncertain times.
