A little matcha goes a long way! Follow the steps below to make a batch of your own matcha green tea iced sugar cookies this fall.
How to make matcha iced sugar cookies
These are the easiest sugar cookies with royal icing you’ll make. The decorations are simple and require no intricate details, so each cookie will take just a few moments to ice and the cookie recipe is also very quick from start to finish! Start by prepping the sugar cookie dough.
- Step one. In a separate mixing bowl, mix together flour, baking powder, and salt.
- Step two. Place, butter (vegan) and sugar together in the mixing bowl and mix until well combined.
- Step three. Add eggs, vanilla, vanilla bean and Aiya Matcha powder.
- Step four. Mix together until well combined.
- Step five. Pour dry mixture into the butter, sugar and egg, mixing until cookie dough forms. You’ll know the dough is ready when it pulls away from the mixing bowl and forms a ball.
- Step six. Preheat oven to 395 degrees Fahrenheit.
- Step seven. Transfer dough onto a parchment lined solid surface.
- Step 8. Dust dough with flour and roll out to 1/4″ thick.
- Step 9. Cut the dough into small circle shapes using a circle cookie cutter, or champagne glass.
- Step 10. Remove excess dough from the cutouts and transfer cookies to the oven.
- Step 11. Bake for 5-6 minutes or remove from oven just before golden brown.
- Step 12. Cool completely before icing.
Easy Aiya Matcha infused Royal Icing
Once the cookie dough is prepped and baked off, you’ll make detail consistency royal icing, colored in 3 shades of green by adding an increased measurement of culinary Aiya Matcha powder to icing. Transfer all 3 shades of the Aiya Matcha icing to separate piping bags fitted with a star tips.
- Step 1. Whisk meringue powder and water together until until soft peaks form.
- Step 2. Switch to a paddle attachment and mix in confectioners sugar until well combined.
- Step 3. Mix in a few droplets of water at a time to achieve the detail consistency, which is still paste like but with softer peaks.
- Step 4. Divide the icing evenly into 3 separate bowls.
- Step 5. Mix 1/8 tsp Aiya Matcha powder into the first bowl of icing. Add 1/4 tsp Aiya Matcha to the second bowl and 1 tsp Aiya Matcha powder to the 3rd bowl.
- Step 6. Stir until well combined and the icing colors are ombre shades of green.
- Step 7. Transfer icing to the individual piping bags fitted with star tips.
- Step 8. Pipe dollops of the different shaded matcha icing onto the tops of the cookies, creating a star shape. Set aside to allow the icing to harden for 15-20 minutes.
- Step 9. Enjoy!

Ingredients
Sugar Cookies:
- 3/4 cups vegan butter (or real butter softened)
- 1/2 cup confectioners sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1/4 tsp culinary grade Aiya Matcha powder
- 1 tsp vanilla
- Seeds from half vanilla bean
- 2 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp salt
Matcha infused royal icing:
- 3 cups confectioners sugar
- 1 1/2 tbsp meringue powder
- 1/4 warm water (+ extra to thin icing)
- 1 tsp Clear vanilla extract or regular vanilla extract
- culinary grade Aiya Matcha powder
Instructions
Sugar cookies:
- In a mixing bowl, mix together flour, baking powder, and salt.
- Then place, butter (vegan) and sugar in a separate mixing bowl and mix until well combined.
- Add the eggs, vanilla, vanilla bean and culinary grade Aiya Matcha powder and mix until thoroughly combined.
- Pour dry mixture into the butter, sugar and egg, mixing until cookie dough forms. You’ll know the dough is ready when it pulls away from the mixing bowl and forms a ball.
- Preheat oven to 395 degrees Fahrenheit.
- Transfer dough onto a parchment lined or floured solid surface.
- Dust cookie dough with flour and roll out to 1/4″ thick.
- Cut the dough into small circle shapes using a circle cookie cutter, or stemless champagne glass.
- Remove excess dough from the cookie cutouts and transfer to a parchment lined baking sheet.
- Bake cookies in the oven for 5-6 minutes or remove from oven just before golden brown.
- Cool completely before icing.
Aiya Matcha infused Royal Icing:
- Whisk meringue powder and water together in a mixing bowl until until soft peaks form.
- Switch to a paddle attachment and mix in confectioners sugar until well combined.
- Mix in a few droplets of water at a time to achieve the detail consistency which is still paste like but with softer peaks. It’s a little softer than outline icing.
- When desired icing consistency is achieved, divide the icing evenly into 3 separate bowls.
- Mix the first bowl of icing with 1/8 tsp Aiya Matcha powder, the second bowl with 1/4 tsp Aiya Matcha powder and the third bowl with 1 tsp Aiya Matcha powder.
- Stir until fulling combined then transfer icing to 3 piping bags fitted with star tips.
- Squeeze a dollop of the different colors of Aiya Matcha icing onto tops of the cookies, creating a star-like shape. Set aside to allow the icing to harden for 15-20 minutes.
- Enjoy!

These cookies are dairy free but are just as delicious baked with regular butter.
