Apple Pie Pop Tarts
Are you team pumpkin spice or apple cinnamon this time of year? We’re team apple over here and I have a long list of festive fall recipes lined up to make! First up I’m sharing the mini pop tarts that I made about a week ago.
The little apple pie pop tarts are as cute as they are delicious, stuffed with homemade sweet apple pie filling.

You’ll find the apple pie filling simple to make on the stove top, with the tart granny smith apples, spicy cinnamon & vanilla bean. Of course, any pie crust for this recipe will do, but the coconut oil crust has been my go-to for quite some time.

It’s vegan friendly, delicious and super easy to work with. And I personally like the way it bakes in the oven and the subtle flavor it gives to my treats.

The pop tarts are like bite-sized homemade pies, no fork necessary. And let’s not forget about that pink drizzle of glaze on top! For a hint of sweetness and of course some color!

Small in size, but packed with all the flavors of the season.

Apple Pie Pop Tarts
Description
Bite sized apple pie pop tarts made with coconut oil pie crust and topped with a pink sugar glaze. Vegan and fitting for the fall season.
Ingredients
For the Apple pie filling
- 2 large granny smith apples peeled and diced into small cubes
- 1/4 cup maple sugar or agave nectar
- Seeds from 1 vanilla bean
- 1/2 cup water
- juice from half a lemon
- 1 tsp cinnamon
- 1 tablespoon vegan butter (I love Miyokos)
For the Coconut oil pie crust
- 3/4 cups coconut oil
- 2 cups organic unbleached all purpose flour
- 1 teaspoon salt
- 3 – 4 tablespoons ice cold water
For the glaze
- 1 cup organic powder sugar
- 2 tsp water
- 1-2 drops natural food colors
Instructions
For the Apple pie filling
- Melt butter in a sauce pan.
- Add in the apples, cinnamon and vanilla bean and cook for about 5 minutes.
- Mix the lemon juice, water and cornstarch together until dissolved.
- Pour over apples and allow to cook until thickened.
- Remove from heat and cool.
For the Coconut oil pie crust
- Line a baking sheet with parchment paper.
- Preheat oven to 375.
- Pour flour and salt into a large mixing bowl.
- Cut the coconut oil into the flour and salt mixture with a pastry cutter.
- Add water 1 tablespoon at a time, mixing well until the ingredients form together softly.
- Roll out onto a floured board to 1/2 inch thick.
- Cut crust in to 2 inch squares, using a pizza slicer. You should be able to get at least 16-18 squares from one crust.
For the pop tarts
- Fill a square of crust with a small spoonful (teaspoon) of apple pie filling. Top with another square of pie crust square and seal all 4 edges with a fork.
- Repeat these steps until all squares of crust have been filled.
- Bake 10-12 minutes or until golden brown.
- Cool.
- For the glaze: (Make this after the pop tarts have cooled)
- Whisk the water into the powdered sugar until fully incorporated. Add in the food coloring until the desired color is achieved. The glaze should flow off the spoon easily. If it’s too thick, add more water one tsp at a time. If too thin, add more sugar.
- Drizzle over the top of the pop tarts and allow 15 minutes to set.
- Serve and enjoy!
The glaze is spoonable and dippable, but be sure to work quickly because it dries really fast.

Stir.

Spoon.

Drizzle.
