It’s been a while since I made pie, but this one i It’s been a while since I made pie, but this one is special! A request for lemon meringue by my dear daughter Amaia who turns 17 today! She is my inspiration, and along with her sister, the reason behind the startup of my blog all those years ago. 💛 The pie is lemon meringue, made with coconut oil crust, homemade lemon filling and toasted Italian meringue. Italian meringue is preferred as it’s denser than French meringue and holds up well with pie or however else it’s used, macarons too. In addition to pie, we’re hosting a coastal themed party this weekend to continue her celebration! I’ll share all the special details soon.
