Last summer I planted a few chamomile seeds in our garden and now we have an abundance of blooms growing and ready for harvest. Simple syrup is one of my favorite ways to use garden herbs so I wasted no time making a quick and easy lemon and chamomile simple syrup. Although delicious on its own, when paired with just a little citrus vodka, tonic and (or) champagne over ice, it transforms into a light and herbal summer time cocktail, fitting for the season! In addition to taste and aroma, you’ll learn about the benefits of the herbal chamomile below.
LEMON CHAMOMILE SPARKLER
Fragrant and floral summer chamomile infused cocktail topped with champagne.
Although chamomile is commonly used in tea, it adds wonderful flavor to drinks and desserts as well. Today’s chamomile cocktail is the perfect combination of herbal and citrus, smoothed out with the vodka and syrup, that’s finished with effervescence for the ultimate tasty seasonal sip.
CHAMOMILE TASTE
Chamomile has subtle apple, honey and citrus notes. It’s not too over powering and is welcoming in aromatics and flavor. When harvested, the fresh blooms can be used in salads, to decorate desserts, to make homemade tea, drinks and more! As you can tell, there are many benefits to this daisy look alike, which will make growing and consuming even more enjoyable.
CHAMOMILE BENEFITS
Chamomile is known for its healing properties. From boosting immunity and treating colds, to relieving anxiety, stress and supporting healthy sleep patterns. Chamomile can also relieve stomach discomfort and be used to reduce acne and support anti aging. For all of these reasons and more it is so worth using and even growing!
GROWING CHAMOMILE
Growing chamomile from seed is very easy. We are located in zone 8a and it only took a few months for the plants to mature. I did not start the seeds indoors, but waited until the weather had warmed over 70 degrees prior to planting. Chamomile will do well in partial shade but also thrives in a nice sunny area, as long as there’s sufficient water. The reason I chose to grow my own is because I had trouble finding it for purchase. I will link the seeds I used below that have done wonderfully in our garden.
HOW TO MAKE LEMON CHAMOMILE SIMPLE SYRUP
Making this simple syrup is super easy, only requiring 4 ingredients. You will need organic sugar, chamomile blossoms that have been soaked and cleaned, sliced lemons and water. Simply bring all of these ingredients to a boil, then allow to boil for 2-3 minutes. Remove from heat, strain and cool.
The simple syrup is wonderful on top of cakes, ice cream, fruit salads and of course cocktails, adding wonderful floral flavor and properties for added health benefits.
MAKE IT A MOCK-TAIL
If cocktails are not your thing, you can easily mix the simple syrup with tonic water and fresh lemon over ice for a refreshing afternoon beverage.
HOW TO MAKE LEMON CHAMOMILE SPARKLER
But if you’re here for the cocktails, you’ll mix the simple syrup and vodka in a shaker.
Then pour into two champagne coupes. Top with champagne and tonic, then garnish and enjoy!
I like to think of this cocktail as a good balance of healthy and indulgence, with benefits from the chamomile, it would be a great drink to enjoy after a long stressful week!

Description

Ingredients
FOR THE LEMON CHAMOMILE SIMPLE SYRUP
1 cup sugar
2 cups water
1/2 cup chamomile blossoms, cleaned
1/2 large lemon, sliced
FOR THE LEMON CHAMOMILE SPARKLER:
3 parts lemon chamomile simple syrup (1.5 parts each)
2 parts citrus vodka (1 part each)
Champagne or tonic water (optional)
Lemon wheels, lemon peel and chamomile blossoms for garnish.
Instructions
FOR THE CHAMOMILE SIMPLE SYRUP:
Pour sugar and water into a pot and mix together until combined.
Bring to a boil.
Pour in chamomile blossoms and lemon slices.
Boil for 2-3 minutes then remove from heat.
Cool and strain.
Transfer to a heat proof container to chill.
FOR THE LEMON CHAMOMILE SPARKLER
Fill cocktail shaker with ice.
Pour in 3 parts lemon chamomile simple syrup and 2 parts vodka and shake until well combined.
Pour evenly into two champagne coupes.
Top with champagne or sparkling wine and a topper of tonic.
Garnish with lemon and chamomile.
