Summer is starting to wind down and we’re so not ready! We have roughly three weeks until remote school starts so we’ll be savoring every last drop of the season until then! Birthday celebrations and our wedding anniversary tend to take up the bulk of August, but I still have a list of posts to share before transitioning to fall, starting with today’s Strawberry Rhubarb Frosé! I know, rosé (and rhubarb) season is on its tail end, but there’s still room for this ultimate grown up slushy before we transition to fall!
Refreshing Strawberry Rhubarb Frosé
Tart, frosty and refreshing strawberry rhubarb frosé, made with strawberries, rhubarb and your favorite bottle of rosé. Perfect for end of summer sipping and entertaining too!
If you love rhubarb and rosé, this frozen cocktail recipe is a must try before summer’s end! My mother in law shared some of the rhubarb from her garden and if you happen to have any leftover, this is the perfect way to use it!
Frosé flavor profiles
This summer frosé has such delicious flavor! The tart and sour rhubarb is balanced with the light sweetness from the strawberries and pulled together with floral and fruit forward notes in the rosé, making it the ultimate summery beverage.
Which Rosé to buy?
Choosing a rosé that you enjoy is my number one suggestion for making this frosé. Since you’ll be adding fruit to the frosé, something that’s not too dry, or sweet, that’s light and fruit forward will pair best. We went with a mid range bottle of Côte de roses rosé, which has red fruit and floral notes, making it a delicious pairing with the strawberries and tangy rhubarb.
How to make this recipe
This recipe is a breeze to prepare, but there’s one important step that I highly recommend. Freezing the rosé. Freezing the rosé, makes the wine an ideal slushy consistency, for blending, with no added ice necessary.
Start by pouring the full bottle of rosé into a shallow glass baking dish. Freeze overnight. The rosé won’t freeze solid, because of the alcohol content of the wine, but will be nice and icy and chilled, for blending with the rhubarb and frozen strawberries.
Use a potato peeler to peel ribbons of rhubarb from 1-2 stalks. Set aside, then cut the rhubarb into 1 inch slices measuring enough for 1.5 cups. Heat water with raw sugar and bring to a boil. Turn heat to medium and pour in the sliced rhubarb. Cook for roughly 5 minutes, stirring until the rhubarb begins to break down. Remove from heat and transfer to a glass dish to cool. Once the rhubarb has fully cooled, place it in a blender with frozen strawberries, and frozen rosé. Blend.
Pour the frosé into a pitcher and it’s ready to serve. Top with rhubarb ribbons as an elegant garnish!

Ingredients
1 bottle of your favorite rosé (Côte de roses) – frozen overnight
1.5 cups frozen strawberries
1.5 cup fresh rhubarb (peeled for garnish, then sliced and cooked down)
1/3 cup water (for rhubarb)
2 tbsp raw sugar (for rhubarb)

FOR THE ROSE:

Blend until smooth, then pour into glasses of choice.
Garnish with strawberries and/or rhubarb ribbons.

Notes
If making the rhubarb in advance, you’ll just want fresh rhubarb on hand at the time of serving to garnish each glass of rosé with the gorgeous rhubarb ribbons.
