We’ve combined two classics to form one layered bar, that’s as dreamy as it is delicious and also vegan/gluten free! After making a batch and sharing with family, it didn’t take long before we labeled these bars “the best” and for good reason!
No Bake Chocolate Peanut Butter Bars

How to make Chocolate Peanut Butter No Bake Bars
These chocolate peanut butter no bake bars are incredibly easy to make! The recipe starts with no bake oatmeal cookies without milk. Substitute the butter and milk for coconut oil/milk and use GF oats and vanilla. Pour the heated no bake cookie mix into a parchment lined glass dish, spread and chill. Top the chilled no bake cookie base with peanut butter and powdered sugar blend. The blend is thickened but still slightly gooey. Spread on top of the no bake base and chill. Pour melted dark chocolate over the top of the peanut butter no bake cookie layers, sprinkle with salt and place back in the fridge to set. Once chilled cut into bars and indulge.
I was actually in the process of shooting the bars, when my old camera stopped working. It was a challenge to set them aside in the fridge for an entire week without getting to try a bite, but they were totally worth the wait! Now that my new camera has arrived, I’m excited to share some new images with you, in addition to the recipe. -I took some close up shots so you could see the textures in every layer.
How they taste
The bars have a nutty and oat base, smooth and gooey center, with a salted dark chocolate top. Almost like an elevated peanut butter cup with crunchy oats and you won’t even miss the dairy or gluten. Description
Delicious layered chocolate peanut butter no bake bars. Vegan & Gluten Free
Ingredients
For the No Bake Base:
1/2 cup raw organic sugar (could also try coconut sugar)
1/4 cup unsweetened cocoa powder
1/4 cup almond or coconut milk + a dash more if needed
1/2 cup coconut oil
1 tsp gluten free vanilla
1/2 cup chunky peanut butter
3 cups cups gluten free oats
For the Peanut Butter Center:
1.5 cups creamy peanut butter
1/2 cup organic powdered sugar
1/2 cup GF oats
1 teaspoon salt
For the Chocolate Top:
1 10 oz bag of vegan dark chocolate chips
Kosher salt for topping
Instructions
For the no bake base:
Line an 8×6″ glass dish with parchment paper.
Mix coconut oil, sugar, cocoa powder and alternative milk in a pot over medium heat.
Bring mix to a boil and allow to bubble for 1 minute.
Remove mix from heat and stir in peanut butter, oats, salt and vanilla until well combined.
Pour no bake mixture into the bottom of the baking dish, then place in the fridge to cool.
For the Peanut Butter Center:
While the no bake base is cooling, mix the peanut butter, oats, sugar and salt together until well combined.
The mixture should be thickened, but still slightly gooey.
Spread the peanut butter mix evenly over the cooled no bake base, then return to the fridge to chill.
For the dark chocolate top:
Heat the vegan chocolate chips in a double boiler on the stove until melted.
Pour melted chocolate over the cooled peanut butter layer.
Sprinkle with kosher salt.
Return to the fridge to chill for 1 hour.
Remove from fridge once fully chilled and cut into bars.
Enjoy!
Notes
Store in an airtight container in the fridge for up to a week.

These no bake cookie bars are without a doubt one of the easiest vegan desserts to make without sacrificing flavor. I commonly make them around the holidays. This year I also made vegan peanut butter balls and both were enjoyed so much that I thought combining the two would make for such a delicious alternative dessert to share with you all! Although the recipe is healthy-ish, it’s still got quite a bit of sugar, in the no-bake and peanut butter layers. Still so worth making and I really hope you give them a try!
