What are you most looking forward to this Christmas? If hosting is your thing, today I’m sharing an incredibly easy Cranberry Vanilla Bellini that you can make ahead and enjoy come Christmas morning!
Easy Cranberry Vanilla Bellinis
A tart blend of fresh cranberries and vanilla bean, pureed and then paired with chilled prosecco. Simply served in champagne coupes and garnished with fresh rosemary and cranberries for holiday cheer!
These Cranberry Vanilla Bellinis are wonderfully festive and a delightful cocktail to make for Christmas breakfast or brunch! The flavorful morning favorite packs a tart punch that’s mellowed out with creamy vanilla, then finished off with a delicious topper of sparkles!
The bellinis can even be enjoyed all the way into the evening, pairing nicely with holiday meals and desserts!
How to make Bellinis
Bellinis are quite similar to mimosas, but the traditional Italian beverage is made with peach nectar/puree and prosecco instead of champagne. Since cranberries are in season and such a festive winter fruit, I subbed out the peaches to craft this holiday rendition of the classic. Slightly tart, yet smooth, fruity festive, to be enjoyed with every sip!
To make bellinis, simply cook down the cranberries and seeds from a vanilla bean with raw sugar and water, then puree! Run the puree through a sieve, then cool. Pour the cooled cranberry vanilla puree into each coupe then top each glass with prosecco.
Prosecco is a little less effervescent, and lightly sweeter than champagne and made in Italy. The sweet undertones in prosecco offer a variety of versatile pairing options including tart cranberry during the holiday season.
This one’s perfect for serving a crowd! I recommend making the cranberry puree a day or two in advance for easy breezy serving and more time to enjoy with friends and family!

Description
A blend of fresh cranberries and vanilla bean, pureed and then paired with chilled prosecco. This sparkling bellini is simply served in champagne coupes and garnished with fresh rosemary and cranberries for holiday cheer!
Ingredients
3.5 cups fresh cranberries
2 cups water
Seeds from 1/2 vanilla bean
1/3 cup raw sugar
Chilled Prosecco
Rosemary and fresh cranberries for garnish
Instructions
Pour the water, sugar, cranberries and vanilla bean into a pot.
Heat over medium, allowing the cranberries to pop and break down (about 5 minutes.)
Once the mixture begins to break down, use an immersion blender or regular blender to puree the hot cranberries until smooth.
Pour the pureed mixture through a sieve to remove the pulp. Allow to cool.
Once cooled, pour the cranberry vanilla mixture into the bottom of each champagne coupe (about 1/4 of the way full.)
Top with prosecco, then gently stir to combine.
Garnish with rosemary and cranberries.
Serve immediately.

Notes
Make puree 2 days in advance. Store in the fridge in an airtight container until ready to serve.

The prosecco in this bellini can easily be substituted with san pellegrino, or ginger ale for a non-alcoholic version that tastes just as delicious!
