Happy Monday! I’m slowly easing back into the swing of things with my right hand. Last week I received a custom splint and started my PT, so I’m moving in the right direction. It’s been 3 weeks since my surgery and I’ve been itching to get back into the kitchen and bake! With all the new cookie cutters that I designed earlier this year, it’s been on my list of to do’s to try them out.
Tea and macarons go hand in hand. In fact, I often enjoy macarons while sipping a cup of my favorite blend. Lately I’ve been on a matcha kick. Matcha is the vibrant Japanese green tea leaves that are ground into a powder. It’s known for its health benefits, including antioxidants and mood lifting properties. The culinary blends can easily be used in baked goods, smoothies and even ice cream.
So the other day I made eclairs, for the first time ever! If you’re not familiar with eclairs, they’re the cream filled french pastries, often topped with chocolate or fruit glaze. Since I’ve already learned to make french macarons, making eclairs was my second french dessert experiment. I like to call it an experiment because let’s be honest here, not everything that I make turns out. Especially when modifying the ingredients to dairy free.
I know I’m not the only one who had a long and rough week. I’m with you. I’ve felt the emotions and the heartache myself, along with friends and loved ones at home and across social media. There are many needing extra support right now. Instagram specifically has been a place full of beautiful words, kindness and inspiring posts, all of which warm my heart. That sense of community has brought with it peace, and comfort, and a reminder that we’re not alone, and that the worries and concerns we’re feeling right now are surely valid.

I was experimenting with the idea of making homemade dairy free nutella a few days ago and although I didn’t get nutella, I did get a rich chocolate and hazelnutty blend with a consistency perfect for making truffles.

On Saturday I shared some rose and vanilla bean meringues I had made over on instagram. I actually made the meringues earlier last week but my first batch were undercooked and turned out horrible, which you may have seen over on snapchat! After a quick do over, and the proper amount of time in the oven, these crispy cookie delights baked up just right, and have been the perfect little treat to munch on over the holiday weekend!
